Insta Pot Supper?

I’m a ‘fly by the seat of my pants’ kinda cook.

How is that working for me so far, you ask?

Well I haven’t sent anyone to the hospital yet because of my food, so I guess that’s good!

Today is another one of those days where I had no idea what to make for supper and I have 4 people depending on me feeding them. It used to be 5 people plus extras periodically now its 4 plus extras periodically You’d think after doing this for 28+ years I’d have it figured out.

I have a dear friend who likes lists and makes menus for the week on a white board, shops according and is a great example of what I’d like to be. My married daughter likes having everything organized and planned and does it well also.

I on the other hand ‘go with the flow’ and just ‘wing it’ and then get stuck in a rut and struggle getting out of it.

Supper has always been a bit more of a struggle for me to keep interesting, healthyish and affordable. Oh and also tasty. I have a few kitchen gadgets to make life easier as they say, a slow cooker, a kitchen machine, convection oven and toaster oven. Just this last summer I happened to find an Insta-Pot at a garage sale for a really good price and to top it off it’s an 8qt and was only used once. My daughter has one and treated us to ribs cooked in there and they were fall-off-the-bone tender and flavorful. Because of that I had wanted one for a while but was to cheap to buy a new one, especially if it was only going to get used once a year or so.

Like all new gadgets it takes some trail and ere to see if you really like it and that’s where I was at tonight.

I have some sliced bone-in smoked ham in my freezer from pig slaughtering earlier this month which I thawed slightly in the mic. Peeled and cut some potatoes, put that into my Insta-pot, added maybe about a cup of beef broth that I had in the fridge, some cream, salt, pepper and onion flakes. Turned the setting to stewing for 45min. and waited.

Surprisingly it turned out good. I could cut back on the amount of time a little but other than that the meat was very tender and passed the test!!

I need to get into the habit of documenting my creations wither they successed or fail but I didn’t and so I can’t share any proof that it was edible. Oops!
